Cheap Eats: Baked Tofu and Rice Recipe

Baked Tofu and Rice: a great vegetarian meal, really easy to make and really tasty!

Ingredients:

Extra Firm Tofu (one block) $2.00

Wild Rice or Brown Rice (1 cup) approx. $1.19

1 pkg dried veggie soup mix $1.75

Button mushrooms (1 cup) cut in half - Optional $2.00

1 veggie bullion cube 

soy sauce

olive oil

Total cost for this whole recipe approx. $8 CDN

Makes 6-8 servings

1. Lightly brown tofu in frying pan  with olive oil and soy sauce.

2. Put the pkg of dried veggie soup and veggie cube into 4 cups water.  Bring to boil.

3. While waiting for soup to boil, place rice in casserole dish (9×13 inch).  Put tofu (and mushrooms) on top of rice.

4. As soon as soup boils, pour on top of all ingredients in casserole dish.  Cover with 2 layers of tin foil.  Bake at 350 degrees for one hour or until rice is tender.

Let stand for a few minutes then dig in!

Cheap Eats: Savoury Tuna Casserole Recipe

With the rich tastes of curry, cheese and tuna, this casserole is pure comfort food.  You can also use multigrain or whole wheat pasta, reduced-fat soup and reduced-fat cheese.

Ingredients:

1 can of flaked tuna $1.78

2.5 cups (before cooking) of small noodles like macaroni $2.17 for a 900 g pkg

1 can cream-of-mushroom or celery soup $0.97

1/2 cup water

1/2 cup shredded cheddar cheese $1.78 per 100 g

1 cup frozen peas $2.47 per pkg

1-3 tablespoons mild curry powder (to taste) $3.49 per 400 g pkg

1-2 tsp black pepper

1 tsp salt

Topping (optional): additional 1/2 cup shredded cheese.  If you’re going to have a topping, pre-heat oven to 250 Fahrenheit.

Total cost for this whole recipe (without additional cheese topping) approx. $8 CDN

Directions:

1. Start cooking pasta according to package directions.  When pasta is halfway done, put the soup, vegetables, water and tuna in a pot under med-high heat.  

 

2. Stir as it heats up.  Gradually add the 1/2 cup shredded cheese.  When mixture is simmering/bubbling gently, add the curry, pepper and salt to taste.

 

3. By this time the pasta should be cooked.  Drain pasta, then add pasta to the tuna curry mix.  Simmer for another few minutes and serve.  OR put the mixture in a casserole dish, spread the additional 1/2 cup shredded cheese on top, and put in the pre-heated oven.  Turn on the broiler.  Cook for 3-5 minutes until cheese is browned on top, and serve.

CHEAP EATS: CREAMY BROCCOLI SOUP RECIPE

Need a nice light lunch on a cold day? Here’s a tasty and easy to make soup recipe that won’t hurt your wallet courtesy of my friend, Michelle. Thanks Michelle!

2 potatoes ($1.89)

1 small onion ($0.73)

1 head broccoli ($2.48)

lemon juice (1 lemon $0.35)

sweet chili sauce ($1.38 per bottle)

olive oil or other cooking oil (olive oil costs around $5.78 per 100 ml)

veggie or chicken stock ($0.97 per box)

water, salt and pepper to taste

 

Total cost for this whole recipe approx. $8 CDN

 

Makes 4-6 servings

1. Chop onion, broccoli and potato into small chunks.

2. Saute’ onion in oil for a couple of minutes then add potatoes. Season with salt and pepper.

3. Add broccoli.  Saute’ for a couple more minutes then add water and stock (50/50) until the veggies are covered.

4. Bring to a boil then simmer for half an hour.

5. After simmering, pour all ingredients into a blender (or use a hand blender) to pure.

6. Add lemon juice, more salt if necessary, and sweet chili sauce to taste.

 

Serve with some warm bread on the side and enjoy your meal!
